“This dish is amazing for feeding a crowd. I use feta instead of Ricotta every time. I also make it a ton of different ways – I’ve added grilled chicken, or a can of tuna in olive oil and added olives.”

One pack of organic thin sliced chicken breasts OR chicken cutlets
One cup of flour on a plate mixed with salt and pepper.
Lightly dredge chicken in flour (tap off excess flour)
Heat 2 Tbsp of butter in a regular pan on medium high heat (non-stick pan doesn’t brown as nicely, I like copper.)
Put lightly floured chicken breasts in pan
Cook on one side until nicely browned (about 5- 7 mins).
Flip chicken, COVER and SHUT OFF the heat.
Second side will brown nicely and cook through.
The cover will maintain the moisture for delicious yet plain enough chicken that kids love.
Feel free to dress chicken with pan juices, they are yummy.

“This is super easy for a quick and filling dinner. You can put over pasta, quinoa, whatever you want! This is a recipe for one serving so think of how many people you want to cook for and add to the recipe.”

“This is one of my go-to’s for lunch – but could be dinner too. I make 4 servings at once and they are ready to go for the week.”
